Enjoy this easy pasta dinner for a quick week night meal, it will have your family begging for more. It is a delightful treat mid to late week when you are exhausted from the work week since it only requires one pan it makes for easy clean up as well.

1 small Onion

2 Tbsp. Olive Oil

1 Clove Garlic

2/3 cup White Wine

1 slice Bacon or more chopped into small pieces

2 Tbsp. Lemon Juice

2 1/2 Cup Chicken Stock

10 Oz Spaghetti noodles

10 Oz Raw frozen Seafood or more (Shrimp, Scallops, Squid, Mussels and Clams) I buy bags of frozen seafood at Costco

Add olive oil to the pot over medium heat, once hot add garlic, onion, and bacon.  Cook until the onions are soft and the bacon is cooked.

Pan with Onion, Garlic and Bacon

Deglaze the pan with white wine scraping the bottom brown bits, add a squeeze of lemon juice.

Chicken Stock Added to the Bacon mixture

Add the chicken stock and bring to a boil.

Pasta added to the easy pasta dinner

Once boiling add the pasta noodles to the pan, and boil for about 7 minutes. Add the Seafood to the pan and boil for another 3 to 4 minutes.

Instructions
 

  • Add olive oil to the pot over medium heat, once hot add garlic, onion, and bacon. Cook until the onions are soft and the bacon is cooked.
