Flank steak is a very lean steak which makes it a fairly tough cut of meat. The perfect way to prepare flank steak for the grill is to marinate it, which is what makes Moroccan Spiced Steaks so delicious. 1 medium onion, thinly Sliced
1 ½ Tbsp fresh minced ginger
½ Cup Olive Oil
5 Tbsp lemon juice
2 Tbsp soy sauce
2 Tbsp parsley
1 Tbsp ground cumin
1 Tsp Turmeric
2 Tsp dry sherry
1 Tbsp. Chili Powder
1 Tsp oregano
2 large garlic cloves minced
1 Tsp coarsely ground pepper
4 pound flank steak
Mix the first 13 ingredients in a large bowl.
Divide marinade between 2 large shallow baking dishes. Add steaks to dishes turning to coat in marinade.
Cover and refrigerate overnight, turning the steaks occasionally. Remove steaks from marinade into a heavy small sauce pan.
Grill steaks to desired doneness. Bring marinade to a boil.
Cut steaks diagonally into think slices, pour some of the marinade over. Garnish with fresh cilantro
