For an extremely amazing meal try Jalapeño and Beer Braised Short Ribs! These short ribs are irresistible and are melt in your mouth delicious!

8 lbs. very lean short ribs cut into 3 inch pieces

2 Large onions, coarsely chopped

2 Cups canned tomato sauce 

½ Tsp dried jalapeño peppers

1/4 cup red wine

1/4 cup firmly packed brown sugar 

2 Tpsp. green pepper 

1 Tbsp. dry mustard 

4 large garlic cloves minced

½ tsp cayenne pepper

¼ Tsp ground cloves 

1/4 Tsp cinnamon

2 cups beer

Preheat oven to 275

Or in a large Dutch oven arrange ribs in a single layer and sprinkle onions around the ribs.

Combine all the ingredients except for the beer in a large saucepan,

simmer over medium heat until slightly thickened, stirring occasionally about 10 minutes.

Cool slightly, stir in beer, pour mixture over ribs.

Cover the pan with the lid or foil and bake and tell them he is very tender. About 4 to 5 hours.

Remove the ribs from the pan and keep warm. 

Combine all of the pan juices in a saucepan skim fat from juices and boil over medium heat until the liquid is reduced to 2 cups.

Additional notes for making Jalapeño and Beer Braised Short Ribs

The ribs can be made one day ahead if you were making the ribs ahead, return the ribs to the pan and cover and refrigerate. When you’re ready to reheat, bake at  375 degrees until the meat is heated through about 45 minutes.

One thing that was extremely hard to find was Dried Jalapeno I went to 4 different grocery stores and settled on Jalapeno paste. It is better to plan ahead and order it on amazon. Which I will be doing for when I make short ribs again.
