For an easy weeknight meal try chicken with peanut sauce. The chicken is very tender yet juicy, and the sauce you won’t be able to stop eating!

3 Tbsp. Soy Sauce
1 Tbsp. Oil
2 ½ Tsp. Minced Ginger
1 Tsp. Chili Paste
1 Tbsp. Brown Sugar
1/2 Cup Low Salt Chicken Broth
6 Tbsp. Peanut Butter
Chicken breast or thighs or legs.
Pour 2 Tbsp. soy and oil and 1 Tsp. minced ginger, turn to coat and let stand for at least 20 minutes.
Place chicken in a small baking pan, and turn to coat and let stand for at least 20 minutes.
Preheat the oven to 425 roast chicken until cooked thoroughly for about 25 to 30 minutes for chicken breast or thighs, and 40 minutes for legs. Make sure the internal temperature of the chicken is at least 165 degrees.
Meanwhile, prepare the sauce: combine peanut butter, broth, sugar, soy, ginger and chili paste in a heavy salt small saucepan simmer sauce until slightly thickened, whisking frequently about two minutes. You can also microwave the sauce and it turns out just as delicious!
To plate the chicken with peanut sauce arrange chicken breasts on a plate and spoon sauce over a chicken. You can garnish the chicken with green onions if desired and serve with Asian noodle salad which will be a recipe coming soon.
