Beef in Barolo or Merlot made with chuck roast is a very elegant dinner, it looks and smells delicious, and trust me this recipe will not disappoint! cut of meat if it is cooked right, I love having beef as a main dish, what can I say I am a meat and potatoes kind of girl!

3 pound Trimmed Chuck Roast
3 Slices of bacon I used 4 (I love bacon)
2 Tbsp Rosemary
3 Tbsp finely chopped Parsley
1 tsp sage
3 Cloves Garlic Minced
1 tsp paprika
Salt and Pepper
Olive Oil ( I used bacon grease)
2 carrots, cut into 1/4 dice
1 Onion, finely sliced
2 bay leaves
2 celery ribs
1 bottle Merlot or Barolo
Cook Bacon until crisp, sauté onion until soft. ( I used the bacon grease)
Brown meat in olive oil ( I used bacon grease mainly because I was nearly out of olive oil and I forgot more at the store, story of my life)
Add wine to deglaze the pan, what you want to do is scrape the bottom with a wooden spoon until you get all the brown bits stuck on the bottom up.
Add meat, onions and the rest of the ingredients to the Dutch oven (if you don’t have a Dutch oven you can use any old pan or baking dish)
Bake at 300 for approximately 4 hours.

Beef in Barolo or Merlot tips and tricks
This is best if Beef in Barolo or Merlot is made a day before you plan to eat it. I am a no waiting kind of girl so I am going to eat it tonight and tomorrow. Degrease the sauce and serve with your choice of sides. You can add potatoes to the pot if you wish.

- 2 Carrots Cut into 1/4 inch Dice
- 1 Onion Finely Sliced
- 2 Bay Leaves
- 2 Celery Ribs Chopped
- 1 Bottle Merlot or Barolo
Instructions
- Cook Bacon until crisp, sauté onion until soft in olive oil
