Asparagus salad is a great spring and summertime recipe that is light and delicious.  It is so fresh and the pesto dressing is out of this world. This salad is crunchy and yet flavorful, every bite has an incredible taste. The mixture of ingredients together is amazing, and it’s healthy. You can not go wrong with this salad.

1 bunch of asparagus 

1 ½ cup raisins 

¾ cup Parmesan cheese

1 cup almonds

1 cup fresh mint leaves

¾ cup Olive Oil

3 Tbsp. dried parsley

1 clove Garlic 

1 Tbsp. Lemon Juice

¾ Tsp salt

Boil water, place the raisins in a bowl and add boiling water to cover. Set the raisins aside to plump and soften. While the raisins soak, make the pesto, in a food processor or heavy blender.

Add the mint, olive oil, Parmesan, parsley, ¼ cup almonds, garlic, lemon juice, and salt together.

Blend until very smooth.

Sliced asparagus very thin on a bias so that each piece is about 2 inches long and transfer them to a large bowl drain and add the raisins then add almonds.

Add the pesto and stir to combine.

Chicken would be a great addition to this asparagus salad recipe if you wanted to add a bit of protein. This salad will not disappoint. It is absolutely amazing!

Ingredients
  

  • 1 Bunch Asparagus about a pound
  • 1 1/2 Cups Raisins
  • 1 Cup Almonds
  • 3/4 Cup Mint Fresh mint leaves
  • 3/4 Cup Olive Oil
  • 3 Tbsp. Parsley Dried
  • 1 Clove Garlic
  • 1 Tbsp. Lemon Juice
  • 3/4 Tsp. Salt
