8 ounces of cream cheese
1 ½ teaspoons grated onion
2 Tbsp. Finely chopped parsley
2 Tbsp. Finely chopped chives
Chutney drained
½ cup almonds
1 tsp paprika
Mix until well blended and form into small balls then roll in blanched and toasted almonds. Sprinkle with a little paprika
I toasted the almonds in the oven on 350 for about 5 to 10 minutes until I noticed that they are this beautiful golden brown color.
In my mixing bowl, I added grated onion. Then I added chutney, (today I used mango chutney which I had on hand) and cream Cheese.
Note: The grated onion gets a little watery, so for better results pour out the liquid. If you don’t have time to roll into balls you can make a dip in which case leave it in, especially if you want it a little creamier.
I finely chopped up chives and parsley and added them to the cream cheese mixture above.
Using my kitchen aid mixer I blended the mixture until it was well incorporated. You could use any mixer or even your arm muscles and a fork! For best results make sure your cream cheese is at room temperature so you do not wear yourself out…
To the toasted almonds, I added paprika and I used an ice cream scoop to form balls. I dropped the little balls into the almond mixture and rolled them around.
Almond Balls would also be great served with our Blue Cheese and Chive Dip in the link below.
