Easy Shrimp Gumbo is a delicious and quick weeknight meal. It would be great for company coming over or entertaining because it comes together so quickly.

1 large onion chopped
1 green pepper chopped
2 Cloves Garlic Minced
1 14.5 oz can Diced tomatoes
1/2 Tsp Rosemary
1 Tsp Salt
Hot sauce to taste
1 Tsp Paprika
1/2 Tsp Pepper
3 Cups Water
1 Cup Long Grain Rice Uncooked
1 Lb Peeled Frozen Shrimp
In a small amount of oil, combine onion and pepper.
Sauté until soft, Add remaining ingredients
Bring to a boil. (I added the shrimp frozen unpeeled and as they thawed a little I peeled them)
I love cooking with All Clad, it cleans up easily and is durable!
Afterwards, reduce heat to a simmer and cook for 20 minutes longer, or once the rice is done.

A little about Shrimp Gumbo
Shrimp gumbo is a southern recipe which originated from Louisiana traditionally they used Cajun seasoning and andouille sausage which both would be a good addition to this recipe. I am not typically a fan of sausage and only recently have acquired a taste for it and I made Brunch Soufflé which was amazing.
